Very few things in this industry are more gratifying than sharing what I do with others. Of course, making customers happy with a new barrel or batch is a wonderful feeling, but being able to choose a single cask with an old friend like Hawk is second to none. Hawk has always been a terrific friend and an exceptional bartender—if you’ve ever had the pleasure of sitting at his bar, you know few can match his skill as both creator and curator, not to mention his hospitality. So when he told me he’d snagged a barrel of Cazcanes (something I’ve never been offered before), I jumped at the chance to partner with him.
Hawk has made a name for himself championing great additive-free tequila, and this brand is at the forefront of that important movement. They make plenty of outstanding tequila, but we immediately zeroed in on this show-stopping cask. Aged in very active Four Roses barrels, it crushed all the other samples. It could easily be one of the best single barrels we’ve ever bottled—even alongside our remarkable Fortalezas. Honestly, if it arrived in a Fortaleza bottle, nobody would bat an eye, given its creamy texture and rich, supple character. It really is that good.
Now, let’s talk about how it tastes. The color is Old Gold (0.5). The nose is downright gorgeous—ripe pineapple, coconut husk, sweet yellow plums, honey, honeysuckle, Tahitian vanilla, and buttermilk frosting. A little air draws out more oak spice, balancing the sweet, fruity nose. On the palate, it’s just as beautiful, with a continued yellow-fruit theme of plums, quince, and pineapple, plus exotic green tea, sweet oak spice, and caramel candies. This is one of the most opulent, expressive single barrels of tequila I’ve ever tried. At 100 proof, it’s superbly balanced (rare for an elegant aged agave spirit), and it explodes with flavor if you add a drop of water—though I love the tension at full strength. It’s easily one of the finest tequilas we’ve ever put our name on. Thank you to Cocktails by Hawk and Cazcanes for bringing us in on this fantastic project!
