Our second batch of K&L Liquors is here—and wow, it's something truly special. I’ll always refer to this label as “Every Drop,” but this new release is called “Dawning Era”—a name that reflects our evolving relationship with Kentucky bourbon: buying, blending, and bottling our own juice. This batch was far more nerve-wracking and complex than the first. It’s composed of three different lots of that now-legendary liquid, distilled under contract in Frankfort, Kentucky, and aged for over 16 years near Lawrenceburg. While the industry norm is to avoid wasting any of this exceptionally rare whiskey, I insisted on tasting every single barrel prior to blending. With volumes already shockingly low, I made a proportional blend using samples from each cask to mimic the final product. But one barrel stood out—negatively. Just a few drops (from fewer than 19 liters total) turned the blend into a wood-driven monolith, stripping away the red fruit-forward charm. Once we pulled that barrel out, the blend clicked into perfect harmony. Another barrel, unique and outrageously good on its own, yielded only 23 liters but contributed surprisingly little in the blend. That one got held back too. The final result is beyond even my highest expectations. I’ll try to do it justice based on my blending sample—though I know the final marriage will evolve further before bottling.
