He’s incredibly warm, possesses an encyclopedic knowledge of distillation, taught us a great deal about the region and its spirits, and far exceeded the lofty expectations we had going into our appointment. His vines are planted in rich limestone soils, which help preserve acidity in the fruit, and he is a stickler for detail. The reason the Grand Champagne region is considered the source of the finest Cognac lies in the soil—it produces grapes that are fully ripe, with high acidity and low potential alcohol. This is critical because distillation is all about concentrating the flavor of the base wine. If the wine sits in a tank and oxidizes, that oxidation will show in the final Cognac. High acidity levels help prevent oxidation during distillation and eliminate the need for stabilizing sulfur. At the same time, a lower alcohol base wine is necessary to ensure the delicate fruit character isn’t overwhelmed. Full ripeness is also essential—harvesting early to preserve acidity results in a wine that tastes hollow and unpleasant. The resulting profile of Bouju’s Fines Saveurs is a high-acid, fruit-forward style of Cognac. This is a vibrant, energetic brandy that speaks clearly to the quality of Bouju’s base wine.
