The 2019 Minervois Savoir Viellir is crafted from old-vine Syrah in this famous appellation in southern France. The name "Savoir Vieillir" translates to "knowing how to age" and this is not just an easy-drinking Languedoc red, but one built with longevity in mind. This strikes a balance between richness and freshness. The tannins are firm yet polished, giving it a solid backbone without overwhelming the fruit.
